Chili oh Cili !!!

'Membesar dengan cili', Itulah yang mampu aku katakan. Dari kecil masa dok dgn Tok&Tokwan, makcik @Mak Uda selalu buat cermai 

bersama sambal cili padi dgn lesung batu, untuk dimakan begitu saja. Rasa masam-manis-pedas, itulah gabungan rasa yang sedap.Kadang-kadang makan mempelam muda

Kuey Teow

Teringin nak makan kuey teow goreng tapi nak buat rice noodlenya sendiri. Google2 akhirnya jumpa resepi&video kat internet ttg how to make rice noodle aka kuey teow.

Bahan:
1cup@250g tepung beras/rice flour
1/3cup@ 84g tepung jagung/corn flour
1/2teaspoon @ 2.5g garam
350ml air sejuk

caranya:
Masukkan semua bahan dalam bekas & sebatikan campuran. Sapukan minyak sikit@mentega@majerin pada tudung periuk yg leper@bekas leper yg tahan haba, dan tuangkan sedikit campuran tepung ke atasnya dan stimkan/kukuskan. macam buat lempeng tp tak sama..Bila dah masak dlm 2-3 minit kalau api kuat, gulungkan lempeng tersebut. Ulang& buat sehingga larutan tepung habis. Pastu gunting rice noodle tu dan masukkan ke dalam kuali untuk digoreng. Goreng la macam nak masak nasi goreng@bihun goreng@ mee goreng @ maggi goreng.
P/S: Halalnya kuey teow @ rice noodle bergantung kpd bahan dan minyak yg digunakan semasa membuatnya. Biasanya orang cine suka menggunakan lemak babi utk menggantikan majerin@ minyak. Sebab lemak babi sedap bagi dorang. Jangan salahkan dorang sebab guna lemak babi sebab dorang yg masak, suka hati dorang la kan. Kita? cari la yang halal.

My Teh Tarik

Salam...
Harini minum teh tarik buat sendiri. Bahan2: Teh uncang(black tea@intense tea@any tea), hot water,fresh milk, a teaspoonful of sugar..

1- Brewing the tea. I've used 3 black tea& 1 vanila tea




2- warm the fresh milk, I prefer in the small pot on the stove with low heat style.



3- Pour the milk into milk frothter






4- Tarik-tolak sampai ada buih(terpulang nak byk mana buih)







5- Pour the frothered milk into the tea jug.









6- the sugar & stir..



Enjoy!!! the homemade less sugar-no high sugar condensed milk-frothered milk tea!!!

Nasi ayam ala2 Hainan

Salam again. Today I've successfully cooked a main dish by myself. How to make the dish? Well...First I deal with the chicken, wash them thoroughly and boiled them with some ginger,garlic and a pinch of salt. After 15 minutes, separate the chicken from its stock and put aside. Then stir fry a stick of cinnamon, 3-5 cloves, 2-3 cardamon & a star anise with a 3-5 spoonful of butter@margarine in a rice cooker pot until you can smell the fragrance of the spices. Then add some nicely sliced shallot@pickel onion,ginger and garlic into the pot, caramelize them. Then put your preferred rice(I prefer basmati rice) and a suitable amount of chicken stock into the same pot & cook them.Taste them accordingly. For the chicken, I marinate them with paprika powder, 2-3 spoonful of honey and a tasteful pinch of salt. Then put them into the oven for 15-20 minutes on 200°C(mine is an electrical oven). What a chicken rice without the soup and chili sauce right.. For the soup I've thrown in a finely chopped of a bunch of corriander & adjust the taste with salt. To make the chili sauce, I've cooked blended 10-15 of fresh red & green chilis with 5-9 clove of garlic in a small pot, add in some water, 3-5 spoonful of sugar, a nice and tasteful pinch of salt and a few drops of white vinegar. Cook about 10-20 minutes. For vegies, you can use fresh cucumber and lettuce. Finally, nicely plate them and don't forget to recite a supplication before eat. ô_Õ

Hari ni makan mi rebus

Harini dah takda idea nak masak ape2...tiba2 dapat ilham nak masak mi rebus..:
Bahan2 & cara2:
1- Halia 1cm, bawang besar 1 ulas, 3 ulas garlic, 5-7 biji cilipadi, 1 genggam shrimp shell/1-2 sudu udang kering - diblend/dikisar/ditumbuk dgn lesung batu ...yang penting hancur...:) tumbuk dgn tangan pun boleh...mestila kan kalu gune lesung batu, mesti tumbuk dgn tangan.
2- Kentang 3-5 biji atau keledek 1-2 biji atau nak campur keledek sebiji & 2-3 biji kentang pun boleh..nak lebih pun boleh- buang kulit!!!
3- Empukkan/lembutkan/masakkan kentang & keledek either microwave/rebus/bakar(kalau dok dlam hutan)
4- Bila kentang /keledek dah empuk, lenyekkan je terus dalam peiuk tu ..tak pun blend sumenye yer..
5- Campurkan bahan yg diblended/dikisar dgn kentang/keledek yg telah dilenyekkan, tambah air..bg berkuahlakan...jgn lupe masukkan skali udang/ayam/daging
6- Masak hingga mendidih dlm 15-20 min, likatkan kuah dgn tepung jagung(larutkan 1-2 sudu tepung jagung dalam air sejuk) dgn mencampurkannya ke dalam masakan.
7- Adjust rasa dgn garam dan gula
8- boleh dimakan dgn mi segera/ramen/soba/instant noodle/mane2 mi ...letak taugeh/sawi rebus/kobis atau ape2 saje sayur yg disukai..
Dah siap!!! 30minit je....:)

Nasi Dagang

Pada hari Jumaat lepas, while surfing through the internet, suddenly my stomach was calling for a new menu which not available in my neighbourhood, Perth City or even in Australia itself. The new menu is called Nasi Dagang, it's not suitable to be called rice trade/commerce. The original recipe was taken from myresepi.com, and I've modified & simplified it(so it's not original anymore, no copyright law against me), to make it more convenience and saving my cooking time.Let's cook...
Bahan-bahan:
Untuk Nasi Dagang :
1- Beras basmati 2 and half cup, half cup of glutinous rice, and a spoonful of raw rice.
2-A large shallot
3-A 1-cm ginger
4-A half to spoonful of sea salt(depends on the saltiness of your salt, follow your taste)
5-A small spoonful of Fenugreek
6-A small pack of coconut milk powder(can use more if u want to )

How to cook rice:
1- Mix all the rices together, wash and rinse them if necessary, and I put 4 cups of water, and soak them for a while.
2- Thin slicing the shallot , as well as the ginger
3- solubilize the coconut milk powder in cold water, make sure it dissolve perfectly(up to you)
4-Mix the ingredients together in rice cooker and cook them.


Bahan-bahan utk lauknya:
1-A pack of 5-6 pieces of Spanish Mackerel or blue mackerel or any other fish you like, you also can substitute with chicken or meat.
 2-An Onion, 3-5 garlics, 4cm ginger, 5-7 small hot chilies, 1 cm prawn paste/belacan
3- 2-3 tablespoon of fish curry powder and chili powder.(use the type of curry accordingly)
4-4-6 slices of dried tamarind fruit/asam keping/asam gelugor or you can just use tamarind paste/puree
5-Cooking Oil
6-2 pack of coconut milk powder
7- Salt and sugar

Cara2nya :
1- Blend semua bahan dalam nombor 2
2- Larutkan santan serbuk dalam satu mangkuk air sejuk, larutkan semuanya
3-Tumis/garingkan curry and chili powder dgn minyak masak dalam kuali/periuk dgn api perlahan(2-3min). Jangan sampai hangit/burned
4-masukkan bahan yg telah di kisar/blend dalam kuali and tumis skali (1-2 min)
5- masukkan 1 liter air suam/panas /sejuk kedalm  periuk yg ada tumisan tersebut, followed by the fish
6- Kuatkan api, masak 15-20 min hingga ikan masak, then masukkan santan yg dilarutkan & asam keping
7- after about 5 minutes, adjust the taste with salt and sugar.
8-hidangkan dengan nasi.

P/s: sayur ikut selera masing2. I just use green bean shoot. Boleh gak buat acar. Bagus ada sayur ulam2 sebab nasi dagang terlalu banyak lemak dan kalori. Pastikan ada sedikit exercise pada waktu petang selepas makan. Gambar xda, maby next time.Selamat mencuba, tak sampai 1 jam dah siap masak!!!!  :))))).

semalam adalah hari kopok lekor..

Yesterday went to Kong's and grabbed a pack of Indian Mackerel aka ikan kembong & a pack of sogu flour( tepung sagu jenama sogu). As soon as I arrived at my kitchen, without hesitant I defrozed the 7 fortunate IM and sketching a plan of my modified fish sausage recipe. Hehehehehe. Then I took out my largest knife ever in my kitchen and started the smelly fishy IM work. Pergh! the smell is a pure odour of defroze frozen fish! Lovely! Luckily I got blocked nose and I wanted to keep my congested nose to decongested till the end of my work. After stripping the skin of IM out, I removed the big bones and letting the small bones of the fish to stay with its beloved muscle aka fish meat. Why? I wanted to feel the pricking sensation of fish bone on my tongue.LOL. Actually, I was in lazy mode on that time. After fishy work including few times manual washing without washing machine like Japanese fish experts who use a washing machine step to neutralize the toxic of poisonous deadly delicious fish, which if the inexperienced people prepare the fish to eat, it will cause absolute death to the eater. So I excluded the washing machine step because of no washing machine inside my house and the IM is well known non-toxic and harmless fish. Then mince or blend the fish to a smaller minute texture..hmmm...I put 2 and half tea spoonful of salt which is equal to 12.5g of table sea salt into the blended fish and mixed them well.























For the flour, I used 2 type of flour, which are sogu flour and tapioca starch flour.The proportion of the fish, sogu flour and tapioca starch flour is 6-7 fish: 300g : 90g. We can modify the ratio as I was following my modified fush sausage recipe. Mix the flour and fish well, add some water and make them doughy like, not too soft, not too firm, not too hard in consistency. Then shape the mixture to whatever shape u want, but I transformed my mixture into nice short shape like sausage and put them in hot boiling water. Wait for few minutes until the sausages floating indicate they are already cooked. cool down a bit and nah! dah siap!

masak sate

semalam beli sate mentah, 10 sticks=$8, bile bakar kat dapur gas.. makan2 masin... maby sate singapore letak dlm kicap masin mcm indon gak.
tak puas hati, so hari ni buat sate sendiri..bahan2:
1- a chicken breast
2- a lemon grass
3- 2 shallots
4- 2 garlics
5- a few( cumin, fennel, corriender seed)
6- a teaspoon of ground tumeric
7- a small teaspoon of salt
8- 2 teaspoons of sugar

Put all ingredients(except tumeric and chicken) in a blender, and blend them. Cut chicken into small cubic size. Mix the chicken with tumeric abd blended ingredients.Marinate for a night( but i marinated just 4 15 min bcoz can't bare with the lovely smell of raw satay).
After marinated, skew them accordingly, I use an iron skewer. If u gonna use bamboo skewer, make sure soak them in the water first to avoid the skewer get burn during grilling process. Then spray a little bit of oil on raw satay and grill them on ur stove. Bare in mind, safety is a must especially grilling satay inside the house. Safety first! Finally I can eat satay! Yum Yum!
